Sweet Potato Chili Recipe


For those days you forget about dinner and want to simply "throw something together". For those days you just need a warm comforting meal. For those days ordinary soup sounds boring. This is the soup for you.


8-10 servings

Gather:

- 2 pounds ground beef

- 3 medium-sized sweet potato, cut in 1/2 inch cubes

- 1 medium yellow onion

- 2 cans of pinto beans

- 2 cans of black beans

- 3 cans of kidney beans

- 1 1/2 cup dry red wine

- 1 quarts canned tomatoes

- 2 cloves of garlic, minced

- 1 T chili powder

- 2 teaspoons smoked paprika

- 1 1/2 teaspoon salt

- 1/2 teaspoon pepper


Create: In a large dutch oven, cook the ground beef on medium heat until browned, making sure to chop the ground beef into small chunks. Add sweet potato chunks and onion and cook until the onion sweats and the sweet potatoes soften slightly (note: they will still be rather hard). Add all the beans, red wine, tomatoes, garlic, chili powder, smoked paprika, salt, and pepper. Place lid on pan and cook over medium heat for at least 35 minutes, stirring occasionally. When a fork inserted in sweet potato comes out easily, your soup is ready!


Serve with a slice of bread or just by itself. Want to spice it up or change it up? Throw in those extra mushrooms that are about to go bad in your fridge, cut an extra onion if you like... soup is very forgiving so have fun with it and taste as you go!
